BBQ Thai Chicken Skewers

2 boneless, skinless chicken thighs, each cut into 6 chunks
3 tbsp Encona Thai Sweet Chilli Sauce
1 tbsp lime juice
2 tsp fish sauce
1 garlic clove, crushed
½ tsp black pepper
1 tbsp oil
1 tbsp crushed salted peanuts
1 tbsp fresh coriander, finely chopped
1) Place the chicken thighs into a bowl or zip lock bag and coat in the Encona Thai Sweet Chilli Sauce, lime juice, fish sauce, garlic, salt and pepper. Seal or cover and leave to marinate in the fridge for 2 hours.
2) Divide the chicken thighs between 4 skewers and brush with oil. Place on a BBQ or in a hot griddle pan and cook for 12-15 minutes, turning frequently.
3) Serve topped with crushed peanuts, coriander and Encona Thai Sweet Chilli Sauce to serve.
