Encona Thai Sweet Potato Chilli Wedges

- 4 tbsp Encona Thai Sweet Chilli Sauce
- 6 to 8 sweet potatoes, sliced lengthwise into quarters
- 1 tbsp olive oil
- 1/2 tsp paprika
1) Preheat oven to 200 C / Gas mark 6. Lightly grease a baking tray, or line with baking parchment.
2) In a large bowl, mix olive oil, Encona Thai Sweet Chilli Sauce and paprika. Add sweet potato, and toss to coat. Place on baking tray.
3) Bake 40 minutes in preheated oven. Baste at regular intervals during cooking process.
4) Allow to cool slightly before serving adds to the 'stickiness' and flavour.
